Baked rice pudding

Baked rice pudding

2 dl Arborio rice

1,4 l almond milk

3 Tbsp sugar

0,5 tsp cinnamon

1 tsp vanilla extract

pinch of butter

1-2 dl raisins

Grease inside of a heavy cast iron pan. Mix all the ingredients together and add a few dollops of butter on top. Bake for 2,5-3 hours at 160°c. After 2,5 hours see if the rice pudding has set. If not, bake for additional 30 minutes.
