Coconut Cherry Cookies
40 g butter
60 g sugar
1 egg
1/2 tsp baking soda
pinch of salt
1/2 tsp vanilla extract
30 g desiccated coconut
30 g coconut flour
100 g flour
Beat the butter and sugar together well. Add the egg and continue to beat until light and fluffy.
Mix in the vanilla extract along with the dry ingredients and stir together with a spatula.
Form small balls from the dough, place them on a baking sheet lined with parchment paper, and press gently with your finger in the center of each ball to flatten the cookies slightly.
Place half a cocktail cherry on each cookie.
Bake at 200°C for 5-8 minutes or until the edges of the cookies start to turn a light color.
Once the cookies have cooled, you can make a thick icing from 3 tbsp of powdered sugar and a tiny bit of water.
Spread the icing over the cookies.
