Curried coconut tilapia

1 Tbsp oil

1 small onion, finely chopped

2 cm ginger root, grated

2 cloves garlic, grated

1 Tbsp mild curry powder

200 ml coconut milk

1/2 tsp turmeric

1/2 vegetable stock cube

200 ml water

1/2 red pepper, chopped

3-4 fillets tilapia, cut into bite size pieces

1 red chili, thinly sliced

1 lime, cut into wedges

1. Start by heating oil in a skillet and cook onion until translucent, then add garlic and ginger. Cook for 1-2 minutes before adding paprika and curry powder. Cook for one minute.

2. Pour in water, coconut milk, turmeric and vegetable stock cube to the pan. Simmer for 10-15 minutes.

3. Add fish and simmer for 6-8 minutes.

4. Sprinkle with sliced chili and serve with boiled basmati rice and lime wedges.
