Pistachio crusted chicken

100 g shelled and salted pistachios

1/2 tsp cumin

1 tsp coriander

1 tbsp sesame seeds

1 egg

Maple syrup

A pinch of salt and pepper

Begin by grinding the pistachios in a food processor to a coarse crumb.

In a bowl, mix the pistachio crumbs with sesame seeds, cumin, and coriander.

In another bowl, whisk the egg.

Preheat the air fryer to 200°C (390°F).

Cut the chicken breasts in half to get even fillets.

Dip each chicken fillet into the egg mixture, then coat it in the pistachio crumb mixture.

Lightly spray oil on the chicken and place it in the air fryer basket.

Cook for 8-12 minutes or until the internal temperature of the chicken reaches 70°C (160°F).

In a small bowl, mix the maple syrup with a pinch of salt and pepper. Brush the syrup mixture onto the fully cooked chicken before serving.

This dish pairs well with cooked couscous and a fresh salad.
