Simple guacamole
2 large avocados
1/4 red onion
1 lime, juiced
1 tomato
A pinch of Maldon salt
1/2 red chili, finely chopped (optional)
Start by finely chopping the red onion and tomato and placing them in a bowl. Squeeze the lime juice over the onion and sprinkle with a little salt. Cut the avocados in half, remove the pits, and scoop the flesh out of the skins. Mash the avocado with a fork and mix it into the onion and tomato. Add the finely chopped chili if desired.
If you're storing the guacamole, it's best to press a piece of plastic wrap directly against the surface to prevent it from turning brown. The lime juice also helps keep it bright and green for longer.
