Sweet potato lentil soup

300 g sweet potatoes, peeled and cut into pieces

3 medium carrots, cut into pieces

1 small onion, roughly chopped

75 g dried red lentils

1 tsp ginger

1 tsp mild curry powder

1/4 tsp cumin

A pinch of chili flakes

1/2 tsp smoked paprika

1/2 tsp Maldon salt

3 vegetable stock cubes

2 garlic cloves, finely chopped

1.5 liters water

Start by placing the lentils in a sieve and rinsing them under cold water before adding them to a pot along with all the other soup ingredients. Bring to a boil.

Reduce the heat and let it simmer gently for 30 minutes.

Blend the soup with an immersion blender until smooth and silky.
