Taco Pie with Oatmeal Crust
Ingredients for the dough:
1 dl buttermilk
1 tsp dry yeast
25 g butter
30 g oats
125 g flour or a mix of white and whole wheat flour
Filling:
250 g ground beef
1 jar of salsa (300 g)
1 packet of taco seasoning
100 g grated cheese
Cream cheese (optional)
Green bell pepper (optional), finely chopped
Dissolve the yeast in warm buttermilk and let it sit for a few minutes. Mix all ingredients together and knead into a dough. Roll out the dough and press it into a pie dish, ensuring it comes up the sides like a pie crust. Prick the dough with a fork to prevent bubbles while baking. Pre-bake the crust for 10-15 minutes.
Meanwhile, cook the filling by browning the ground beef in a pan. Season with taco seasoning and add a splash of water, the bell pepper, and the jar of salsa. Let it simmer.
Spread a little cream cheese on the pre-baked crust, then pour the beef mixture over it. Top with grated cheese and bake until the cheese is melted.
Serve with fresh salad, lime, and avocado.
