Tomato soup
1 onion, roughly chopped
2 garlic cloves, grated
1 bay leaf
1 tsp olive oil
2 tins tomatoes
1 tbsp brown sugar
1/2 liter water
1 vegetable stock cube
1 tbsp basil
Salt and pepper to taste
1/4 tsp cayenne pepper (optional, for extra heat)
Sauté the onion, garlic, and bay leaf in olive oil until softened.
Add the tomatoes and let simmer for 10 minutes.
Remove the bay leaf and blend the mixture until smooth.
Add water, the stock cube, and spices. Let simmer for a few more minutes before serving.
