Zucchini fritters

Zucchini fritters

1 medium zucchini, grated

1/2 tsp salt

55 g flour

1 egg

1 spring onion, sliced

pinch black pepper

1-2 tsp oil for frying

Dipping Sauce:

1/4 cup soy sauce

1 spring onion, finely chopped

1 clove garlic, finely chopped

1 small chili, chopped

1. Grate zucchini on a cheese grater and place zucchini in a clean kitchen towel. Squeeze to drain as much moisture as possible.

2. Mix flour, egg salt, pepper and spring onion into the zucchini to make a thick batter.

3. Heat oil in a large skillet and fry small fritters. Press on the fritters to flatten them out. Fry until golden brown, about 2 minutes on each side.

4. Serve with dipping sauce.
